Traditionally distilled strong and yellow Sliovitz aged for 4 years in family cellar, made of the old prunus species called Trnovaca.
The Slivovitz is domestic-crafted in old-fashioned way: pits are fermented with plums and grant sourness to the plum brandy. The brandy is not aged in separate barrels containing only brandy distilled in certain year, but large oak barrels are used and new brandy is mixed with the plum brandy aged more than 10 years. This way people who were distilling brandy were getting the uniform quality of their brandy, no matter of the weather conditions of certain year. The aging of 4 years is approximate lifetime of a brandy in large barrels.
|Very unusuual to the Western palate. A bit pungent and sharp. Best before meals as aperitif, because it provokes stomach acid and must be followed by food. Now I understand why they have it before the soup in the Balkans.
The household of Milorad Mitrovic in Western Serbian city of Kosjeric has been producing Slivovitz ever since. The beginnings are not even remembered, the plum brandy rakija has been feeding and schooling kids for ages. The brandy is aged in the large barrels made from local oak and inherited from father to son. They refuse to use new barrels and stick to the old tradition and checked solutions. All plums are grown in their own orchards, and they proudly emphasize it.
