Ripe quince is harvested, smashed and left to ferment for at least three weeks. It is distilled and re-distilled in traditional way in order to gain the alcoholic strength. Ripe quince has lower contents of sugar and a lot of pectin, therefore it is not so suitable for fruit brandies. This is the reason why good quince brandy is so appreciated.
