Still, I rather prefer Slivovitz than French cognac. Here, you can really feel the smell and taste of marathon aging of brandy, while that is not the case with cognac. The French ozonize the distillate and thus accelerate the aging process of cognac, while with our brandy this is not possible.   Thirty years ago Professor Radoslav Paunovic from the Agriculture Faculty at the University of Belgrade founded the “Primag”, the family household of fruit brandy. He was the first who initiated and who taught about the technologies of the tightly alcohol drinks on the Agriculture Faculty and he was one of the biggest authority of that branch in this part of Europe. Not only they used the most quality species of plum but they grow plums on a family property. Plum Brandy Slivovitz Stream aged at least 4 years in oaken barrels.   This brandy has remarkable tones and a long finish. Plum brandy slivovitz at its finest.   Tok Distillery from Krusevac in Central Serbia was founded by Ljubomir Urosevic, leading technologist of Prokupac for decades. Ljubomir was the designer of the most famous Manastirka Slivovitz and Stomaklija herbal brandy, which were exported in tens of millions of litres. After retirement, Ljubomir founded his own distillery and started to apply his knowledge on his own. His son Ivan is very active at the Agricultural Faculty Zemun and as leading adviser to many Slivovitz producers in Serbia. Their small family-owned distillery produces limited quantities of supreme Slivovitz.     0,75 l, 40% alc. Natural plum brandy Slivovitz distilled in traditional way and aged in oak for 12 years, very deep and complex, having several aromas and fragrances. Three varietes of prunes are used for making The Byzantine Blue rakija, one of them is the old local sort Crvena ranka (The Red Early variety). Only 4.000 l of the Slivovitz is produced every year by the members of the Skerlic family and aged in family cellar. Byzantine Blue is a sort of colour used by ancient Byzanitne painters when expressing the divine, magic and unreal: this is the symbol, message and name of this Slivovitz.  
Wow! You can’t just have a sip and over. You must feel it sliding down your throat, evoking a lot of sensations till it reaches your stomach. Then you must wait for a while and... another wave approaches: a heat is overwhelming your body. You must have a pause between sips, then you enjoy it fully.  A small family distillery of supreme brandy, this is the shortest definition of the Skerlic Cellar. Situated in Toplica, central part of central Serbian region of Sumadija, known for its mild hills and favourable climate, Sumadija is also known for its famous brandy Slivovitz. The climate choses the types of fruit that is grown here, resistant to the drughts in July and August, that shapes the aroma of its brandies. The Skerlics make brandy of the fruit from their own orchards, controlling the fruit while it is still on the trees. Their orchards are made up of several acres of slopes and all family members are included in the business. It makes your body wake up.   The New Hopovo Monastery is a Serbian Orthodox monastery on the Fruska Gora mountain in the northern Serbia, Eastern Europe. According to tradition, the monastery was built by the Despots of the House of Brankovic. The first reliable mention of monastery dates back to 1641.
